Ingredients:
Mince Mixture:
• 5 ml (1 teaspoon) olive oil
• 1 onion, grated
• 2 cloves garlic, finely chopped
• 500 g lean mince
• 5 – 7 ml (1 – 1½ teaspoon) salt
• Freshly ground black pepper
• 3 ml (generous ½ teaspoon) ground cumin
• 5 ml (1 teaspoon) grated lemon zest
• 100 g baby marrows, grated
• 15 ml (1 tablespoon) finely chopped fresh parsley
• 30 ml (2 tablespoons) chopped fresh mint
• 15 ml (1 tablespoon) lemon juice
• 50 g baby spinach, shredded
Mashed Potatoes:
• 4 large potatoes, peeled
• Salt and freshly ground black pepper
• 30 ml (2 tablespoons) milk
• 20 g butter
Method:
Mince Mixture:
- Heat the olive oil in a pan and fry the onion and garlic until soft and fragrant.
- Season the mince with the salt, pepper, cumin and lemon zest. Microwave until done, stirring occasionally and using a fork to break down lumps.
- Steam the baby marrows in the microwave for a few minutes.
- Mix the mince with the baby marrows, onion mixture, parsley, mint, lemon juice and spinach. Spoon into bowls.
Mashed Potatoes:
- Cube the potatoes, add cold water and about 7 ml (1½ teaspoon) salt and microwave until soft. Drain, mash the potatoes and mix in the milk and butter. Season to taste with salt and pepper.
- Spoon the mashed potatoes on top of the mince and grill to brown or cook in the microwave.
